The cocktail bar, led by Alessia Giorcelli, blends technique and creativity with intuition and a style of its own — giving shape to cocktails like spells, crafted to summon what you didn’t yet know you were craving.

The hands behind the ritual

LÕA is the most personal project of Bruno Sixto. His international career has taken him to diverse places such as Spain, the United States, Dubai, Peru, Egypt, South Africa, Vanuatu, among others. This experience allowed him to encounter very different lives and to cultivate a deep love for diversity, culture, gastronomy, art, music, and above all, people.

LÕA is a manifesto of his way of living and enjoying life—a space meticulously crafted to the last detail, where hospitality, multiculturalism, culinary excellence, art, and music intersect. It was born from one obsession: to make sure guests feel they’ve stepped into “another place,” where they can disconnect from the world, leave their worries behind, and simply enjoy being—here and now.

In the kitchen, Chef Jhon Chavarriaga brings his international experience, shaped in London as sous chef at the iconic Gaucho Piccadilly, where he led teams of over 30 cooks. His mastery of fire and ingredients has been refined in Mallorca alongside Stefan Brunner, executive chef at Schwaiger Xino’s, founded by two-Michelin-star chef Gerhard Schwaiger.

He is joined by our sous chef Joaquín Favrat, originally from Argentina, who arrives in Palma de Mallorca after working in the kitchens of Andorra, Croatia, and Italy, where he showcased his versatility mastering the grill, Mediterranean cuisine, and pasta.

At the bar, Alessia Giorcelli crafts a menu built on technique, sensitivity, and immense creativity. She arrived on the island of Mallorca six years ago from her homeland, Italy, bringing her artistry, passion, and deep knowledge of the world of mixology, delighting guests with cocktails that truly make a difference.

In the dining room, Matías Quintana, with extensive international experience in countries such as Brazil, New Zealand, Dominican Republic and Spain, ensures every guest enjoys the best possible experience. His approach is warm and attentive, yet always professional. Thanks to his command of four languages, he’s able to connect with people from all backgrounds and create a welcoming, cosmopolitan atmosphere.

LÕA, BEYOND A NAME, A CONCEPT

LÕA owes its name to the blending of beliefs from the peoples of the New World and the Old Continent. The loas are spirits that guide, seduce, protect, or destroy. Each embodies a different energy: some celebrate wisdom, others pleasure or love; some awaken laughter, invite desire, or call to battle.
LÕA is not a restaurant. It’s a statement. A contemporary sanctuary where the sensory becomes ritual. A room that vibrates with authentic human connection—one that reveals truths and tears down masks. Here, time stretches, conversations grow intimate, and strangers become accomplices.
